Hummus

Hummus (also known as hommus or houmous) can be used as a sandwich spread or as a dip, it is made primarily from chickpeas.

Basic recipe

For about 450 g hummus you need the following:

  • 1 can of organic chickpeas, 400 g
  • 2 tablespoons of tahini (sesame paste)
  • about 125 ml of olive oil
  • 1 clove of garlic
  • 1 teaspoon of cumin powder
  • juice of half a lemon
  • salt and pepper to taste

The preparation is very simple, first you drain the chickpeas and rinse them with water in a sieve. Then you put all the ingredients together in the food processor and mix it until it is a smooth mass. Depending on the thickness, you can add some extra oil or water.

Variations

There are many variations on the basic recipe. For example, try one of the suggestions below:

  • Add extra herbs, such as a handful of fresh parsley or ras el hanout
  • Add a handful of sun-dried tomatoes
  • Add a few (drained and rinsed) grilled peppers with some chili powder
